For The Pot

3 cups of chicken, cooked

  • 1 onion
  • 1 green pepper
  • 2 tablespoons of butter
  • 1/ 2 cup of sour cream
  • 1 cup of cream cheese (1-8ounce package)
  • 1 cup of cellentani pasta
  • 1 teaspoon of chili powder
  • 1/ 2 teaspoon of cumin, ground
  • 1 1/ 4 cup of diced tomatoes with green chilies (1-10ounce can)
  • 1 1/ 4 cup of cream of chicken soup (1-10ounce can)
  • 1 1/ 2 cups of cheddar cheese, shredded
  • 1 tablespoons of oil

Directions

  • Add 1 tablespoon of oil to a cast iron skillet and place on a stove.

    Set temperature to medium.

    Cut the chicken into smaller strips, and add it to the skillet.

    Fry until the chicken is fully cooked, about 10 to 15 minutes.

    Remove from heat and cool.

    Fill a large pot with water, and set on the stove with the temperature at high. Bring the water to a boil, and add the cellentani pasta.

    Cook until the pasta is tender.

    Remove from heat and drain.

    While the pasta is cooking, place a 12" cast iron skillet onto the stove.

    Set temperature to medium.

    Melt the butter in the skillet.

    Wash, peel, and chop the onion.

    Wash, seed, and chop the green pepper.

    Add both vegetables to the hot butter.

    Sauté until the vegetables are tender, usually between 5 to 10 minutes Fold in the canned tomatoes with green chilies.

    Cut up the cream cheese and add to the vegetables.

    Stir for about 2 minutes.

    Add the chicken, and stir until it is fully incorporated.

    Fold in the cumin and chili powder.

    Stir constantly as you work over the hot stove to prevent the mixture from burning.

    Stir in the sour cream and the cream of chicken soup.

    Finally, add the cooked pasta, and stir until the ingredients are fully incorporated.

    Remove from the heat. Shred the cheddar cheese, and sprinkle the top of the pasta.

    Place in the oven, and bake for 25 to 30 minutes.

    Remove from the oven and serve warm
