Berbere Beef Stew

For The Stew

  • 1 Tin Chopped Tomatoes
  • 400ml Beef Stock
  • 2 Tbs Berbere Spice Mix
  • 1 Tbs Ginger Purée
  • 3 Chopped Garlic Gloves
  • 1 1/2 Sliced Onions
  • 750g Braising Steak
  • 1 Tbs Oil


For the Berbere Spice Mix

  • 1 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 2 tsp sweet paprika
  • 2 tsp smoked paprika
  • 1 tsp flaky sea salt
  • 1/2 tsp cloves
  • 2 tsp fenugreek seeds
  • 1 tsp cardamom pod
  • 2 tsp cumin seeds
  • 2 tsp coriander seeds
  • 1 tsp black peppercorns
  • 2 tbsp of dried bird's eye chillies

For The Kale

  • 2 Handfuls Kale 
  • 1Tbs Oil 
  • 2 Chopped Garlic Gloves 
  • 1 Tbs Ginger Purée 
  • 1 1/2 Tbs Nigella Seeds 
  • 1 Tsp Ground Fenugreek 
  • 1/2 Tsp Ground Allspice



For The Flat Bread

  • 300g plain flour 
  • 1/2 tsp salt 
  • 50g butter 
  •  185 ml milk

Directions

For The Stew

  • Heat the Oil in a small Dutch Oven.
  • Spread Beef evenly in the Dutch Oven and allow to sear for 1 minute, stir and repeat, searing two more times, 3 minutes total cook time to brown the beef.
  • Remove the Beef once brown then add the Onions to the Dutch Oven, and fry until soft, not brown.
  • Add Ginger, Garlic, and Berbere Spice Mix, stir-fry for 30 seconds.
  • Add the Beef back to the Dutch Oven, then add the Beef Stock and Tinned Tomatoes.
  • Stir, put the lid on the Dutch Oven and slowly cook for about 3 hours until the Beef is tender.
  • Taste beef and season with salt and pepper as desired.


For The Kale

  • Heat a pan of water until boiling.
  • Add the Kale and cook for 2 Minutes.
  • Remove from pan on to kitchen paper to absorb moisture.
  • Heat a Cast Iron Skillet, then add oil
  • When oil is hot add the remaining ingredients and fry for 2 minutes.
  • Add the Kale back in to the Skillet and cook for a further 2 minutes.

For The Flat Breads

  • Mix all ingredients together.
  • Knead for a couple of minutes.
  • Divide dough in to four pieces.
  • Heat a Cast Iron Skillet.
  • Form dough in to a oval shape.
  • cook in the hot Skillet for 2-3 minutes each side.
